Cacio E Pepe
***Makes 2 servings
6 Oz. Pasta
3 Tbsp. Unsalted Butter, Cubed
Kosher Salt
Freshly Ground Black Pepper
1/3 Cup Grated Pecorino
3/4 Cup Grated Parmesan
-Heavily salt a pot of boiling water
-Cook pasta till Al Dente and reserve 3/4 cup pasta water in the process
-Drain pasta and put the pot back on stove
-Melt most of your butter in the pot, and add hella black pepper, toasting it.
-Add most of your pasta water to the pot and the pasta
-Add the rest of your butter and set on simmer
-Throw both your cheeses in the pot and toss until the sauce coats the pasta
-Enjoy!
