Cinnamon Bun

***Makes 12 Cinnamon Buns

3/4 Cup Milk @110ºF

Packet (1/4 Oz) Active Dry Yeast

3 Tbsp. Sugar

3 Eggs

2 Tsp. Salt

2 1/4 Cups Bread Flour

1/3 Cup + 1 Tbsp Whole-Wheat Flour

3 Tbsp. Milk Powder

2 3/4 Sticks Unsalted Butter (22 Tbsp.), Cut into Small Cubes

1 1/2 Cups Packed Dark Brown Sugar

2 Tbsp. Ground Cinnamon

-Whisk together milk & yeast in a bowl & let sit for 10 minutes

-In another bowl, whisk the sugar (3 tbsp.), eggs, and 1 1/2 tsp. salt

-Add all of the flour, milk powder, and beaten eggs

-Mix with a wooden spoon until a dough forms

-Turn the dough onto a floured surface, knead, and add 10 tbsp butter, 1 at a time.

-Knead for 10-15 minutes until smooth

-Transfer back into the bowl and cover with saran wrap

-Let sit in a warm area until it has doubled in size, about 30-45 minutes

-Meanwhile whisk the brown sugar, cinnamon, and 1/2 tsp. salt in a bowl

-Toss in the remaining butter (12 tbsp.), and toss until the mixture becomes a paste and is completely combined

-Deflate the dough on a floured surface

-Roll the dough into a 12x15" sharp rectangle & spread the brown sugar mixture over the dough leaving 1/4 inch border around the edges

-Tightly roll the dough into a log and freeze on the baking tray for 20 minutes

-Butter a 13x9" baking dish and cut the dough into 12 pieces

-Form 3 rows of 4 cinnamon rolls and let rise (proof) in a warm area for 40-50 minutes

-Bake the cinnamon rolls at 350ºF for 25-30 minutes and let cool

-Drizzle a vanilla glaze over the cinnamon buns and enjoy!
